Ingredients
- 1 dash Salt, table
- 1 dash Spices, pepper, black
- 0.5 serving Water
- 3 cup Arugula, raw
- 2 tbsp Honey
- 1 lemon yields Lemon juice, raw
- 4 cup shredded Lettuce, cos or romaine, raw
- 1 unit Onion, red, raw
- 4 cup shredded Lettuce, green leaf, raw
- 0.5 cup Cheese, parmesan, dry grated, reduced fat
- 0.25 1 tbsp distilled white vinegar
- 2.5 gram Cornstarch
Instructions
- To prepare the vinaigrette, add cornstarch, juice and water in a pan. Stir continuously.
- Bring the mixture to a boil over medium heat. Remove from heat and add salt, pepper, vinegar and honey.
- Transfer the mixture to a blender. Add cheese and blend. Allow cooling to room temperature.
- To prepare salad, in a large bowl, mix onion, arugula and lettuces. Drizzle with vinaigrette. Toss the ingredients gently. Serve immediately.
