Ingredients
- 0.1 cup Salsa
- 1 whole Baguette, brown
- 2 tsp Oil, olive, salad or cooking
- 0.5 cup Beans, pinto, mature seeds, canned, drained solids, rinsed in tap water
- 0.25 cup, sliced Onions, raw
- 0.3 tbsp Ground cumin
- 1 large whole Tomatoes, red, ripe, raw, year round average
- 0.5 cup, shredded Cheese, monterey, low fat
- 1 pepper Peppers, jalapeno, raw
- 1 dash Salt, table
- 0.5 avocado, NS as to Florida or California Avocados, raw, all commercial varieties
- 4 loin, whole Pork loin, Tenderloin, trimmed, separate fat and lean only.
Instructions
- Heat a little oil in a pan over medium heat.
- Mix salt and cumin in a bowl and sprinkle evenly over pork. Add pork to the pan and cook for a couple of minutes on both sides. Keep it aside for a few minutes and then cut it into thin slices.
- Hollow out the bottom and top halves of bread, making sure to leave ¾-inch thick shell. Reserve the remaining portion of bread for another use.
- Now arrange the cut portion of bread, cut sides up, on a baking tray. Bake the bread until it is golden brown.
- In a bowl, add salsa and beans. Smash them until you get a smooth mixture. Spoon out the mixture into the bottom half of baguette. Then top it with cheese, pork, avocado, jalapeno, tomato, onion and top half of baguette. Cut into 4 piece and serve hot.
