Ingredients
- 1.5 head Endive, raw
- 6 medium Potatoes, white, flesh and skin, raw
- 1 pepper Peppers, hot chili, red, raw
- 7 oz Cheese, goat, soft type
- 1 unit Onion, red, raw
- 1 clove Garlic, raw
- 0.5 cup Milk, reduced fat, fluid, 2% milkfat, without added vitamin A and vitamin D
- 2 slice Plain Butter
- 1 tsp Spices, turmeric, ground
- 1 tbsp Ground cumin
- 1 dash Salt, table
- 1 tsp Spices, pepper, black
- 3 oz Nuts, cashew nuts, dry roasted, without salt added
- 1 tablespoon Oil, olive, salad or cooking
Instructions
- For the puree: Cook potatoes for about 15 minutes until soft
- Crush and add butter, salt, pepper and milk
- In the meanwhile: add olive oil in a large skillet, cook chopped onion and garlic
- Add spices and red pepper
- Stir in the endive and cook for around 3 minutes
- Mix the puree and andive mixture, add salt to taste
