Ingredients
- 2 1 slice dill pickle
- 1 unit Cornmeal, yellow (Navajo)
- 2 piece Egg white beaten
- 0.25 cup Mayonnaise, low sodium, low calorie or diet
- 2.5 tablespoon Oil, olive, salad or cooking
- 2 tsp Spices, paprika
- 0.25 cup All-Purpose Flour
- 2 unit Fish, whitefish, mixed species, raw (Alaska Native)
- 1 tsp Dijon Mustard
Instructions
- In a small bowl, mix mayonnaise, Dijon mustard and dill pickle.
- Sprinkle a little salt over fish. In a small bowl, add flour.
- Add eggs in another bowl. In the third bowl, mix paprika and cornmeal.
- Dip fillets in flour, in egg and then cornmeal. Shake off excess.
- In a medium pan heat a little oil. Working in batches, cook fish. Keep turning the fish until both sides are golden.
- Serve hot.
