Ingredients
- 2.5 cup Cornmeal, whole-grain, yellow
- 0.25 tbsp Ground cumin
- 3 1 tsp Minced garlic
- 1 1 can chipotle chiles in adobo sauce
- 3 1/2 cup Tomatoes and Green Chilis, diced, undrained
- 2 serving 1 container CAMPBELL'S Low Sodium Soups, Chicken Broth
- 2 1 cup chopped, cooked chicken breast
- 0.5 1 cup Chopped Green Onions
- 1 unit Bell pepper (green/yellow/red)
- 1 tsp Oil, olive, salad or cooking
Instructions
- Remove 1 chipotle chili from can while reserving the rest for future use. Mince chili.
- Heat a little oil in a pan over medium heat. Add cumin, bell pepper, garlic and onions. Saute the mixture until it becomes tender.
- Add minced chili, corn, tomatoes, chicken broth and chicken. Bring the mixture to a boil. Reduce heat and simmer for a few minutes.
- Serve hot.
