Ingredients
- 0.5 cup, chopped Onions, raw
- 4 potato small Potatoes, red, flesh and skin, raw
- 1 dash Salt, table
- 1 dash Spices, pepper, black
- 2 cup 1% low fat milk
- 0.5 cup All-Purpose Flour
- 3 slice Bacon, pre-sliced, reduced/low sodium, unprepared
- 0.2 1 cup Chopped Green Onions
- 1.5 oz Cheese, low fat, cheddar or colby
- 0.25 cup Creamy dressing, made with sour cream and/or buttermilk and oil, reduced calorie, fat-free
- 0.75 serving 1 container CAMPBELL'S Low Sodium Soups, Chicken Broth
- 2 tsp Oil, olive, salad or cooking
Instructions
- Set the oven temperature to 250 degrees Fahrenheit / 125 degrees Celsius.
- Piece the potatoes using a fork and bake them until they become tender. Cut them into half and keep it aside to cool.
- While the potatoes are being baked, heat a little oil in a pan over medium heat. Add onions and saute for a few minutes.
- Now add chicken broth, ½ cup milk and flour to pan and bring the mixture to a boil. Remove from heat. Add salt, pepper and sour cream.
- Arrange bacon slices on a baking tray and bake them at the set temperature until the slices start to crumble.
- Remove the potato skins. Mash the potatoes slightly and add into soup. Top it with bacon slices, green onions and cheese.
- Serve hot.
