Ingredients
- 0.2 serving Water
- 4 serving PACE, Thick & Chunky Salsa
- 2 tsp Oil, olive, salad or cooking
- 1 tbsp, drained Capers, canned
- 2 plum tomato Tomatoes, red, ripe, raw, year round average
- 1 serving Cosmo's Black Olives Medium Pitted
- 1 1/4 cup Italian seasoned breadcrumbs
- 4 4 Oz Skinless Boneless Chicken Breast
- 1 medium Squash, zucchini, baby, raw
- 2 tbsp Olives, ripe, canned (small-extra large)
Instructions
- In a bowl, mix tomatoes, salsa, olives, zucchini and capers. Keep it aside.
- Sprinkle chicken with breadcrumbs. Heat a little oil in a pan over medium heat.
- Add chicken and cook both the sides until it becomes golden brown.
- Reduce heat and add water. Cover the mixture and continue to cook until the chicken is done.
- Serve chicken with salsa mixture and if required, garnish it with olives.
