Ingredients
- 2 1 oz pimiento-stuffed olives
- 1 dash Salt, table
- 1 dash Spices, pepper, black
- 1 spray , about 1/3 second Oil, PAM cooking spray, original
- 0.5 cup Mayonnaise, low sodium, low calorie or diet
- 2 tablespoon Oil, olive, salad or cooking
- 1 piece Egg white beaten
- 5 1/2 cup Panko (Japanese Style Bread Crumbs
- 8 serving Chicken Of The Sea Lump Crabmeat
- 0.5 fl oz Lemon juice, raw
- 0.25 1 cup Chopped Green Onions
Instructions
- In a large bowl, mix green onions, mayonnaise, salt, pepper, lemon juice, pimiento and egg white.
- Fold in 1 cup breadcrumbs and crabmeat.
- Divide the crab mixture into 12 equal portions and give each portion the shape of a patty (2-inch round).
- Dredge crab cakes in breadcrumbs and then coat them with cooking spray.
- Heat a little oil in a pan over medium heat. Add about 6 crab cakes and cook them on both sides till they are browned.
- Remove the crab cakes and keep them warm. Repeat the procedure with the remaining crab cakes. Serve the crab cakes hot.
