Ingredients
- 1 steak Porterhouse steak, Coles
- 1 cup chopped Broccoli, raw
- 1 small, large, medium Sweet potato, raw
- 1 capsicum Red Capsicum
Instructions
- Preheat oven to 200 degrees Celsius (fan-forced oven)
- Chop capsicum, sweet potato, and broccoli into bite size pieces
- Place chopped vegetables into a bowl with a generous drizzle of Olive Oil
- Toss vegetables until olive oil is evenly spread about
- Place vegetables on a baking-paper lined oven tray
- Add a sprinkle of sea salt, cracked black pepper, rosemary and thyme
- Place oven tray in preheated oven for ~30-35 mins
- Season steak with salt and leave for 20 mins
- Season steak with black pepper
- Cook steak on high heat for 2-3 mins each side (pan-fry / grill / BBQ as desired) (Use your preferred steak cooking method here)
- Remove steak from heat, wrap in alfoil and allow to rest for min 5 mins
- Remove veggies from oven
- Transfer steak and vegetables to plate, add salt and pepper to taste and serve (add preferred steak condiments as desired)
