Ingredients
- 12 ounce Spinach, raw
- 1 tablespoon Oil, olive, salad or cooking
- 1 medium Onions, raw
- 2 clove Garlic, raw
- 2 large Egg, whole, raw, fresh
- 9 ounce 100% liquid egg whites
- 1 ounce All-Purpose Flour
- 1 cup Cheese, cottage, lowfat, 1% milkfat, no sodium added
- 2 serving Land O'Lakes Premium Deli Cheese Sharp Cheddar American Blend
- 1 1/2 cup Water Chestnuts
- 0.3 tsp Spices, nutmeg, ground
- 0.5 tsp Spices, pepper, red or cayenne
- 1 plum tomato Tomatoes, red, ripe, raw, year round average
Instructions
- Preheat oven to 350 F
- Heat oil in skillet over med. heat. Add onion and garlic and cook until translucent. Add spinach and stir until moisture has evaporated (~3 min). Remove from heat and add water chestnuts.
- Whisk together egg whites, eggs, cottage cheese, nutmeg, salt and pepper, and a pinch of cayenne
- Pour egg mixture over vegetables
- Add tomato slices to top and back for 30 - 40 minutes.
