Ingredients
- 4 medium Egg, whole, raw, fresh
- 0.5 leek Leeks, (bulb and lower leaf-portion), raw
- 0.25 cup, crumbled Cheese, feta
- 1 cup Spinach, raw
- 1 dash Spices, pepper, black
- 1 tablespoon Oil, olive, salad or cooking
Instructions
- Clean the spinach and cut the leek into rings
- Heat up skillet and add olive oil
- Add leek and cook until soft
- Add spinach and cook for a couple of minutes
- Add the eggs (you can either whisk or just throw them in the pan)
- Close the lid (or if you don't have a lid try to flip the egg mixture after the egg is becoming solid on the bottom)
- Crumble the feta on top of the mixture and add a dash of pepper
- Eat with bread or rice!
