Ingredients
- 1 cup Quinoa, uncooked
- 1 fillet Chicken breast, low fat
- 1 medium Onions, raw
- 1 pepper Peppers, jalapeno, raw
- 1 cup drained, rinsed Corn, sweet, yellow, canned, drained solids, rinsed with tap water
- 1 sprigs Parsley, fresh
- 1 tsp Salt, table
- 1 tsp Spices, pepper, black
- 1 tsp Oil, olive, salad or cooking
Instructions
- Cook quinoa as per the package instruction.
- Season chicken with salt and pepper.
- Heat olive oil in a wok, add onion sauté for 2 minutes, add chicken and cook for 10 minutes on low heat.
- When the chicken is tender remove from the heat.
- Allow chicken to cool, and shred it for bite size pieces.
- Combine cooked quinoa into the chicken, add corn, jalapeno and parsley mix well.
- Adjust the seasoning by adding salt and pepper according to your taste.
- Cook for 2-3 minutes while stirring continuously. Serve hot.
