I always love having breakfast made of fresh and organic ingredients. Today I just decided to try a new recipe of mine. To make it more nutritious and delicious to eat I decided to include eggs. I am sure I could not have started my day in a better way than this! For this recipe, I have only made use of 1 egg white and 1 egg. However, you can add more depending upon what you prefer. Eggs with sweet potatoes make not only an interesting combo to start your day with, but this dish is also tasty and healthy and can be had with ketchup!

Ingredients
- 50 gram Egg, whole, boiled
- 1 large Egg, white, raw, fresh
- 1 slice, medium Onions, raw
- 1 tsp Oil, olive, salad or cooking
- 1 cup, half cup Sweet potato, boil, mashed
- 1 tbsp Bacon bits, meatless
- 1 dash Spices, pepper, black
- 1 tsp chopped Chives, raw
Instructions
- You first need to prepare sweet potato hash using a half chopped sweet onion, 1 tsp olive oil, a pinch of kosher salt, 1 medium sweet potato that is cut into small pieces and 1 tbsp bacon bits
- Add the egg white and egg into a bowl and scramble it. Add a dash of pepper and salt into the mixture
- Add this egg mixture into the skillet containing potatoes
- Stir the mixture using a spatula once the eggs start setting. Until the eggs are completely cooked, keep stirring. Once done, serve the dish.
