For me this is a comfort meal and I like to indulge in these stuffed jumbo pasta shells after my training session. This recipe originates in Italy where they use lots of cheese on these shells, but I avoid cheese and it is still very tasty! These stuffed jumbo pasta shells are highly nutritive because I stuff them with chicken, corn, olives and black beans. Try to find whole wheat jumbo pasta shells. Feel free to sprinkle some grated cheese before baking if it fits with your macros.
I put this recipe under the cheat meal category because it looks like a tasty junk food, but it is still stuffed with high quality protein, fiber and anti-oxidants.

Ingredients
- 1 5 pieces, 10 ounce Jumbo pasta shell
- 1 unit Minced Chicken
- 1 cup drained, rinsed Corn, sweet, yellow, canned, drained solids, rinsed with tap water
- 1 1/2 cup Bush's Best, Black Beans
- 1 large Olives, ripe, canned (small-extra large)
- 1 cup Tomato sauce, canned, no salt added
- 1 medium Onions, raw
- 1 dash Salt, table
- 1 gram Oil, olive, salad or cooking
- 1 tsp, ground Spices, pepper, black
Instructions
- Cook jumbo pasta shells according to the packaging instructions.
- Cook black beans until soft.
- Preheat the oven to 350 degree Fahrenheit.
- Heat a non stick pan on stove; spray some olive oil and saute onion.
- Add minced chicken and cook over medium heat for 4-5 minutes.
- Add tomato sauce, corn and cooked black beans to it, mix well.
- Add olives, salt and black pepper to adjust the seasoning.
- Stuff the pasta shells with this prepared chicken mixture.
- Spray some olive oil on the baking tray; place the stuffed pasta shells on it.
- Drizzle some tomato sauce on the top of the shells and bake while covering the tray for 20- 30 minutes.
- Serve hot.
