Ingredients
- 1 cup Oil, olive, salad or cooking
- 2 large Egg, yolk, raw, fresh
- 0.6 tsp Salt, table
- 1 wedge yields Lemon juice, raw
- 1 tsp Spices, pepper, black
Instructions
- In a deep bowl, add egg yolks and 1 tsp of lemon juice or vinegar.
- Mix with a handmixer until it's smooth.
- With handmixer running, slowly add olive oil until you form an emulsion. If you pour the oil too quickly, it will separate.
- Continue to add the oil until the mixture thickens.
- Add the remaining lemon juice and mix to combine.
- Add salt and pepper to taste.
