Ingredients
- 3 cup Rice, brown, long-grain, raw
- 3 cup, whole Mushrooms, white, raw
- 1 cup Cheese, cottage, nonfat, uncreamed, dry, large or small curd
- 1.52 dash Spices, pepper, black
- 1 dash Salt, table
- 2 medium Squash, summer, zucchini, includes skin, raw
- 0.52 cup, chopped Onions, raw
- 1 clove Garlic, raw
- 0.32 serving 1 container CAMPBELL'S Low Sodium Soups, Chicken Broth
- 0.2 container Yogurt, Greek, plain, nonfat
- 1 tablespoon Oil, olive, salad or cooking
Instructions
- Cook the rice
- Heat up the oil in a skillet
- Chop all vegetables and add, stir fry until tender
- Add cooked rice for 2-3 minutes. Keep stirring
- If mixture looks dry add some of the chicken broth
- Mix with the yogurt, cottage cheese and add salt & pepper to taste
- Enjoy.
