Carrot cake is the perfect cake recipe for bodybuilders that I can found under the sky. This is now become a perfect breakfast and snacks recipe for me. I am not ashamed to say that I gorge on these cakes as a handy high protein snacks after workout. It is dense, soft and fulfilling.
I have used carrots, egg whites and whole wheat flour as main ingredients for this cake, so the cake contains high amount of protein, complex carbs and vitamin A.

Ingredients
- 1 cup Egg, white, raw, fresh
- 1 cup grated Carrots, raw
- 1 unit Wheat flour, whole-grain, soft wheat
- 1 cup Sweetener, syrup, agave
- 1 tsp Spices, cinnamon, ground
- 1 tsp Leavening agents, baking powder, low-sodium
- 1 tsp Leavening agents, baking soda
- 1 tsp Vanilla extract
- 1 2 TBSP Coconut Flour, Let's Do Organic!
- 1 tsp Oil, olive, salad or cooking
Instructions
- Preheat the oven to 375 Fahrenheit.
- Spray oven proof cup cake molds or ramekins with olive oil.
- Mix flour, coconut powder, baking powder, baking soda, cinnamon powder into a big bowl.
- Take another bowl and add egg whites, agave nectar, vanilla extract and finely grated carrot, mix vigorously until fluffy.
- Combine the dry ingredients to the egg white and mix well, add milk to get the desired consistency of the batter.
- Fill half the ramekin with the mixture and tap.
- Bake for 15 minutes, remove from the oven and let it cool for some time before serving.
