This is a one pot curry recipe, a true Caribbean preparation that is loaded with protein and healthy carbohydrates. Black bean has a great mixing ability and works well with any ingredients. Here in this recipe black bean combine nicely with sweet potatoes. Black beans contain lot of protein and a no fat ingredient, while sweet potatoes are a good source of carbohydrate and vitamins and minerals.
I like to spice it up with thyme and bell pepper to get the true flavor of Caribbean cuisine. This preparation always works for me and I make a big quantity of it to store in fridge and eat over the week. Try this; and I am sure you are going to love it.

Ingredients
- 1 1/2 cup Bush's Best, Black Beans
- 100 whole Sweet potato, raw, whole
- 1 tbsp chopped Onions, raw
- 1 tbsp Spices, ginger, ground
- 1 slice, medium Tomatoes, red, ripe, raw, year round average
- 1 tbsp, leaves Spices, thyme, dried
- 1 tsp Vinegar, balsamic
- 1 medium Bell pepper (green/yellow/red)
- 1 tsp Oil, olive, salad or cooking
- 1 cup SWANSON BROTH, Vegetable Broth
- 1 sprigs Coriander (cilantro) leaves, raw
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
Instructions
- Saute chopped onion with olive oil, in a large pot.
- Add ginger and saute for 1-2 minutes.
- Stir in thyme, chopped tomatoes, vinegar and vegetable broth and boil.
- Add peeled and cubed sweet potatoes and simmer for 10 minutes.
- Add black beans, bell pepper, black pepper and salt and simmer for 5 minutes.
- At the last add chopped coriander leaves and serve.
