I love having burritos for my breakfast as they are really simple and quick to make. These burritos, I must say, are packed with energy and are robust. Besides all the health benefits they provide they are extremely tasty!
The burritos are extremely flexible in that you are free to add other ingredients in case you are not able to get the original ingredients. However, the burritos that are prepared using the above ingredients are healthy and will supply you energy all day long.

Ingredients
- 100 gram Egg, white, raw, fresh
- 2 tortilla Tortillas, ready-to-bake or -fry, corn
- 2 tbsp Sauce, salsa, ready-to-serve
- 1 oz Cheese, low fat, cheddar or colby
- 1 cup Orange juice, chilled, includes from concentrate, fortified with calcium
- 0.25 cup Cheese, cottage, lowfat, 1% milkfat, no sodium added
- 0.25 cup Creamy dressing, made with sour cream and/or buttermilk and oil, reduced calorie, fat-free
- 0.5 cup, chopped or diced Peppers, hot chili, red, raw
- 0.5 cup, pieces or slices Mushrooms, white, raw
- 0.25 cup, chopped Onions, raw
Instructions
- Add cottage cheese, pepper and eggs into a small mixing bowl and set it aside
- Then place the tortillas in an oven
- Take a saucepan and coat it lightly with Pam. Then place it over medium hot for a few minutes
- Saute red peppers, onions and mushrooms until they become soft.
- To the vegetable mixture add the egg mixture and cook adequately
- Now place the above mixture at the center of tortillas and then roll
- Top up the tortillas with salsa and cheese.
- Serve the tortillas with orange juice
