I am big fan of quinoa, the crunchy grain that is high in protein and have innumerable health benefits. I have tried many recipes using quinoa and love all of them. Here I am going to use this wholesome grain with garbanzo beans (chickpeas) and zucchini and trust me this combination works well with both my taste bud and body.
This recipe is high in protein and complex carbs, along with nutrient benefits of zucchini. It is light and healthy, a one pot and wholesome preparation for a bodybuilder and trainer. Try this out and it will certainly provide a break from your regular diets.

Ingredients
- 1 cup Quinoa, uncooked
- 1 cup Chickpeas (garbanzo beans, bengal gram), mature seeds, cooked, boiled, without salt
- 1 medium Squash, summer, zucchini, includes skin, raw
- 1 tbsp chopped Onions, raw
- 1 tsp Oil, olive, salad or cooking
- 1 dash Salt, table
- 1 tsp, whole Spices, cumin seed
- 1 tbsp Spices, turmeric, ground
- 1 tsp Spices, paprika
- 1 tsp Garlic, raw
- 1 wedge yields Lemon juice, raw
- 1 tbsp Parsley, fresh
Instructions
- Season zucchini with olive oil, salt, paprika, cumin powder and turmeric.
- Grill the zucchini from all sides until tender and brown. Cut in small sizes after grilling.
- Marinade garbanzo beans with lemon juice and minced garlic.
- In a large pan heat little olive oil, and saute onions add cumin seeds, turmeric and paprika.
- Add quinoa, two cups of water and salt. Cover and cook for 15 minutes on medium heat, stirring occasionally.
- When the quinoa is cooked add garbanzo beans with marinade, grilled zucchini, and parsley.
- Mix well to combine all the ingredients, and serve hot.
