I love the sesame dressing on roasted chicken and mushroom when I first try this. Now it’s become one of my favorite preparations with chicken. The fresh veggies used in this salad add more nutrition and quality to the recipe.
I love the process of roasting all ingredients altogether into the oven and assemble the salad after roasting in no time. It’s a quick and simple recipe with all the good ingredients. Assemble the salad just before serving to avoid green leaves to get soggy and wilted.

Ingredients
- 1 fillet Chicken breast, low fat
- 1 cup, pieces or slices Mushrooms, white, raw
- 1 cup, sliced Squash, summer, zucchini, includes skin, raw
- 1 tbsp Spices, garlic powder
- 1 tsp Oil, sesame, salad or cooking
- 1 1 tablespoon sesame seeds
- 1 package McDONALD'S, Hot Mustard Sauce
- 1 cup shredded Lettuce, iceberg (includes crisphead types), raw
- 1 fl oz Lemon juice, raw
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 cup, chopped Dandelion greens, raw
Instructions
- Preheat the oven to 400 F, line baking paper in two baking tray and place in upper and lower position.
- Prepare a marinade in a big bowl by mixing sesame oil, salt, pepper and sesame seeds.
- Toss squash slices in the marinade and spread to the upper baking tray.
- Now toss mushroom to the same marinade and spread on the lower baking tray.
- Now add garlic powder and mustard sauce to the remaining marinade and toss the chicken pieces into the marinade.
- Place chicken pieces along with mushrooms on the lower baking tray. Sprinkle any left over marinade over the chicken and mushroom.
- Now roast squash, chicken and mushroom altogether in the oven for at least 20 minutes or until chicken and squash is done.
- Turn the squash and chicken pieces in between for even cooking. Once the roasting is finished remove from the oven and leave to cool.
- Meanwhile prepare a dressing with sesame oil, sesame seeds, lemon juice, salt, pepper and garlic powder, mix vigorously.
- Take a big bowl add green salad (chopped lettuce leaves and dandelion), roasted squash, mushrooms and chicken, drizzle salad dressing and toss well. Serve immediately.
