Ingredients
- 1 fillet Chicken breast, low fat
- 1 1/2 cup Bush's Best, Black Beans
- 1 cup drained, rinsed Corn, sweet, yellow, canned, drained solids, rinsed with tap water
- 1 serving 1 container CAMPBELL'S Low Sodium Soups, Chicken Broth
- 1 cup strips or slices Carrots, raw
- 1 large whole Tomatoes, red, ripe, raw, year round average
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
Instructions
- Heat a deep pan over the medium heat add chicken pieces, chopped carrot, corn, black beans and chicken broth with 1 cup of water.
- Cover and cook for 15 minutes on high heat.
- Then add chopped tomatoes, salt and pepper, let it simmer on medium heat for another 5 minutes.
- Add cheese (if you are using) and parsley, stir and cook for 2-3 minutes to finish the soup.
- Remove from the heat and serve with tortillas chips.
