I like to add some more vegetables in this soup for making most out of it and enhance the flavor. Don’t worry about its large quantity you can store it in the fridge for later use. The soup is good if served with tossed whole wheat bread pieces or croutons.

Ingredients
- 1 cup, shredded Cabbage, common (danish, domestic, and pointed types), stored, raw
- 1 cup Peas, green, canned, drained solids, rinsed in tap water
- 1 cup drained, rinsed Corn, sweet, yellow, canned, drained solids, rinsed with tap water
- 1 small Carrots, raw
- 1 stalk, small Celery, raw
- 1 cup Coriander (cilantro) leaves, raw
- 1 slice, medium Tomatoes, red, ripe, raw, year round average
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 medium Onions, spring or scallions (includes tops and bulb), raw
- 2 1 cup Water
- 1 cup Beef Broth or Bouillon (Canned)
Instructions
- In a deep large sauce pan, add carrots, onions, tomatoes, cabbage, green peas, corn, celery, beef broth and enough water to cover all the vegetable.
- Cook on high heat for a boil and reduce to low to simmer for 20-30 minutes until all the vegetables are cooked and mixed well.
- When the vegetables are cooked add cilantro, salt and pepper as per taste, serve hot.
