Another quick fix recipe for my dinner table, I like to bake fish with vegetables along with some flavorful spices and herbs. The recipe is simple and healthy; I can make it in just 15 minutes of preparation and my scrumptious dinner is ready in very short duration of time.
This quickly prepared recipe is loaded with fish protein and seasonal vegetables nutrition. Use as much vegetables as you like, I select only easy to cook and colorful vegetables to get the various kind of vitamins and minerals.

Ingredients
- 1 fillet Fish, salmon, Atlantic, wild, raw
- 1 small whole Tomatoes, red, ripe, raw, year round average
- 1 small Squash, summer, zucchini, includes skin, raw
- 1 medium Bell pepper (green/yellow/red)
- 1 small Onions, raw
- 1 tsp Garlic, raw
- 1 tbsp Spices, parsley, dried
- 1 fl oz Lemon juice, raw
- 1 tsp Oil, olive, salad or cooking
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
Instructions
- Preheat the oven to 375 degree F.
- Mix – olive oil, garlic powder, lemon juice, parsley, salt and pepper.
- Prepare the vegetables by cutting in desired size and toss with the olive oil mixture.
- Toss the fish with the marinade as well.
- Arrange the baking tray by fist placing all the vegetables and then fish on the top.
- Bake for half an hour and serve.
