I love making this sausage regularly as I love pork. The reason why I added venison to this recipe is because it has low fat content.

Ingredients
- 183.04 gram Ground Venison
- 50 gram Brown Sugar
- 15.04 gram Peppers, hot chili, red, raw
- 2 oz grilled patties Pork, ground, 96% lean / 4% fat, cooked, pan-broiled
- 1.04 tbsp Spices, pepper, black
- 0.24 cup Sugar-based curing mixture
Instructions
- Take a large mixing bowl. Add pork, sprinkle the venison, sage, sugar, pepper flakes and pepper.
- Mix the above ingredients well so that everything is coated uniformly.
- Divide the above mixture into portions of 1 pound each before freezing them
- Start cooking each of the portions after their seasoning them perfectly.
- Serve hot
