I like the simplicity and unique taste of this recipe. This is a healthy, vegetarian, high protein and tasty recipe that pair well with plain brown rice or noodles.
The tofu is crispy and fried with some spices for flavor and gravy is made with spinach puree. Overall the recipe is loaded with iron, fiber, vitamin, minerals and last but not the least protein.
I have come across to this recipe while searching Asian high protein vegetarian recipe. I liked it and try the recipe at home. And trust me; it is brilliant you should also try this.

Ingredients
- 2 oz HOUSE FOODS Premium Firm Tofu
- 1 cup Spinach, cooked, boiled, drained, without salt
- 1 cup Tomatoes, crushed, canned
- 1 tsp Oil, olive, salad or cooking
- 1 tbsp chopped Onions, raw
- 1 tsp, whole Spices, cumin seed
- 1 tsp Spices, allspice, ground
- 1 dash Salt, table
- 1 tsp Spices, chili powder
- 1 tbsp Spices, ginger, ground
- 1 cup Coriander (cilantro) leaves, raw
- 1 tsp, ground Spices, pepper, black
Instructions
- Cut the tofu in small cubes and season with red chili powder, salt and allspices.
- Heat a non stick pan over medium heat and fry the tofu cubes with olive oil, while stirring.
- When lightly brown from all sides, remove from the heat and keep a side.
- In the same pan heat olive oil and add cumin seeds, ginger paste and onions, cook for 2-3 minutes.
- Add tomato and spinach puree, mix well and cook for a boil.
- Add fried tofu, adjust seasoning by adding salt and pepper, and simmer for 2-3 minutes.
- Sprinkle cilantro and serve hot with brown rice.
