This recipe is very close to my heart as it reminds me my childhood, when my granny made this soup for us in long winter nights. It is super tasty and healthy. I am still making this for myself to remind those wonderful years of my life.

Ingredients
- 1 fillet Chicken breast, low fat
- 1 cup Brussels sprouts, cooked, boiled, drained, with salt
- 1 tbsp chopped Onions, raw
- 1 cup Soup, stock, chicken, home-prepared
- 0.5 cup Butternut Squash
- 1 tsp, ground Spices, oregano, dried
- 1 tbsp, leaves Spices, thyme, dried
- 1 dash Salt, table
- 1 tsp Spices, pepper, black
- 1 tsp Oil, olive, salad or cooking
- 1 tbsp chopped Garlic
- 1 tbsp PACE, Diced Green Chilies
- 1 cup Coriander (cilantro) leaves, raw
- 1 fl oz Lemon juice, raw
Instructions
- Take a non-stick pan and sauté onion with olive oil until brown.
- Add chicken, garlic, oregano, thyme, salt and pepper. Cook for 2-3 minutes.
- Add stock and bean sprouts along with butternut slices and green chilies.
- Let it simmer on low heat for 10-15 minutes.
- Finally add chopped cilantro and lemon juice, remove from the heat.
- Serve hot with tossed multigrain bread slices.
