This is one breakfast sandwich I cannot resist. This is the reason I keep trying this recipe quite regularly.
As compared to the classic McMuffin, this sandwich is actually a healthier option for you. A single sandwich is packed with lots of carbs and protein and less of fat.
This is a perfect sandwich to start your day. A couple of sandwiches is enough to get you going for the rest of the day.
The jalapeno pepper used in this recipe helps in metabolism. The pepper along with reduced-fat cheese makes this breakfast dish so flavorful that it is hard to beat.

Ingredients
- 1 large Egg, whole, raw, fresh
- 1 spray , about 1/3 second Oil, PAM cooking spray, original
- 1 oz English muffins, whole-wheat
- 1 serving LOUIS RICH, Turkey Bacon
- 5 sprigs Coriander (cilantro) leaves, raw
- 1 slice, thick/large Tomatoes, red, ripe, raw, year round average
- 2 slice, thin Onions, raw
- 1 dash Spices, pepper, black
- 0.5 pepper Peppers, jalapeno, raw
- 0.25 oz Cheese, low fat, cheddar or colby
Instructions
- Take a small skillet and heat it under medium flame.
- Now cook the bacon until it becomes crisp. Then set it aside.
- Now place the cut-side of the muffin in the skillet and toast it for a couple of minutes before setting it aside.
- Now use little cooking spray for coating the skillet. Then cook egg for a few seconds.
- Sprinkle it with cheese and pepper. Continue cooking it has set perfectly.
- Now placed the cooked egg over the muffin half and top it using cilantro, tomato, onion, jalapeno and bacon. Now place the other half of muffin over it and serve hot.
