Ingredients
- 1 spray , about 1/3 second Oil, PAM cooking spray, original
- 1 large Onions, spring or scallions (includes tops and bulb), raw
- 6 cherry Tomatoes, red, ripe, raw, year round average
- 1 pepper Peppers, jalapeno, raw
- 1 dash Spices, pepper, black
- 1 dash Salt, table
- 2 large Egg, whole, raw, fresh
- 1 large Egg, white, raw, fresh
Instructions
- Take a small bowl and whisk egg white, eggs, pepper and salt vigorously.
- Place a small skillet over the stove and heat it under medium flame.
- When the skillet is mildly hot coat it lightly with cooking spray.
- Now cook tomatoes and chilies until they become soft.
- Now add eggs
- Then continue cooking until eggs are sufficiently cooked
- Then sprinkle the dish with scallion
- Serve hot
