Ingredients
- 1 serving Turkey sausage, fresh, cooked
- 1 cup Barley, pearled, cooked
- 2 medium Egg, whole, raw, fresh
- 1 sprigs Parsley, fresh
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
- 0.5 oz Cheese, cottage, nonfat, uncreamed, dry, large or small curd
- 1 tbsp chopped Onions, raw
- 1 gram Oil, olive, salad or cooking
Instructions
- Take a non stick pan and saute onions with little oil.
- Cut the sausages in small pieces and add to the onions.
- When the sausages are brown add cooked barley, cottage cheese and parsley. Mix well and cook until dry.
- Prepare a baking dish for the hash, by greasing it with non stick oil.
- Transfer the mixture to the baking dish and set at the bottom by pressing gently.
- Crack the eggs on the top of the barley mixture and bake in the oven for 10-15 minutes at 375 degree F or until eggs are set.
- Remove from the oven and sprinkle salt and pepper on the baked eggs.
- Serve barley hash immediately.
