The best part with this breakfast dish is that it is extremely flexible. In fact, you are free to add any vegetable to it. However, I decided to use the good old spinach and mushrooms. This is a wonderful dish to have early in the morning as it will provide you enough of antioxidants, protein and calcium.
The interesting combination of spinach and mushroom is what makes this dish special and tasty.
Besides the rich minerals it provides to you, this dish is an excellent source of protein and carbs. If you are interesting in building muscles, make sure you have it regularly.

Ingredients
- 2 tsp Oil, olive, salad or cooking
- 1 spray , about 1/3 second Oil, PAM cooking spray, original
- 2 large Egg, whole, raw, fresh
- 0.24 tsp Spices, pepper, black
- 0.24 tsp Salt, table
- 4 large Egg, white, raw, fresh
- 4 cup Spinach, raw
- 2 cup, pieces or slices Mushrooms, white, raw
- 1 Medium Vidalia onion
- 0.52 cup Smoked Gouda Cheese
Instructions
- Let the oven be heated to 350 degrees Celsius.
- Take a large nonstick skillet and heat some olive oil in it. Then add onion in it and cook for a couple of minutes. Then add mushrooms into the skillet and continue cooking for 4 minutes or until the mushrooms have become tender. Add spinach and continue heating for a minute.
- Take a medium size bowl and add eggs, pepper, salt, ΒΌ cup cheese, egg whites and egg. Combine all the ingredients well. Now add the spinach mixture and combine well.
- Take a cake pan coated with cooking spray and pour the above mixture into it. Add the remaining cheese over the frittata and continue baking for at least half an hour. By now the cheese would have melted and the eggs would have settled in the middle. Now cut the frittata into 4 wedges and serve immediately.
