Ingredients
- 1 Pound Crab meat
- 1 tbsp, drained Capers, canned
- 1 tbsp chopped Onions, spring or scallions (includes tops and bulb), raw
- 1 tsp Lemon rind, grated
- 1 wedge yields Lemon juice, raw
- 1 tbsp Spices, ginger, ground
- 1 dash Salt, table
- 1 tbsp Oil, vegetable, Natreon canola, high stability, non trans, high oleic (70%)
- 1 large Egg, whole, raw, fresh
- 1 oz Bread crumbs, dry, grated, plain
- 1 sprigs Coriander (cilantro) leaves, raw
Instructions
- Take a big bowl and add crabmeat, chopped capers, cilantro, spring onions, egg, lemon zest, ginger and salt.
- Add bread crumbs -use as much bread crumbs as needed for the binding.
- Mix and knead by using your hand and make balls or round patties with the mixture.
- Heat enough oil in the pan for frying, when it is hot fry the balls in small batches until golden brown from all side.
- Serve with lemon wedges and healthy dip.
