Originally this recipe is made with white rice, feel free to use them if you are not that strict with your diets. Otherwise brown rice goes well with this recipe.
This is a good twist to the rice add nuts to bring crunch in this preparation. It will compensate your need of energy if served along with meat preparations. Ingredients
- 1 cup Rice, brown, long-grain, raw
- 1 cup, chunks Pineapple, raw, traditional varieties
- 1 tbsp Nuts, coconut milk, canned (liquid expressed from grated meat and water)
- 2 1 cup Water
- 1 dash Salt, table
- 1 tsp, ground Spices, pepper, black
- 1 cup Coriander (cilantro) leaves, raw
- 1 gram Nuts, coconut meat, dried (desiccated), sweetened, flaked, canned
- 1 nuts Nuts, pine nuts, dried
Instructions
- In deep sauce pan add water and coconut milk, bring to a boil.
- Add rice and cook while stirring occasionally until soft and fluffy.
- When the rice is cooked add pineapple cubes, nuts, salt, pepper and cilantro mix to combine.
- Garnish with coconut flacks before serving.
