You can serve this dish either for lunch or as a snack. I have made use of spinach for this recipe as it helps provide the daily quota of vegetables for me. However, you are free to add other ingredients if your preference is that way.
In case you use ingredient other than spinach, make sure you try other types of wraps like pesto or sundried tomato.

Ingredients
- 0.24 tsp Salt, table
- 4 oz Cheese, goat, soft type
- 0.52 cup Roasted red pepper
- 4 piece Spinach tortillas
- 60 gram Mint Leaves, green, raw
Instructions
- Take a small bowl and combine mint and cheese in it.
- Microwave the tortillas for a few seconds.
- Spread 2 tbsp of the above mixture over each tortilla. Spread little salt and pepper over each tortilla.
- After rolling up tortillas tightly wrap each tortilla using a plastic wrap. For securing each tortilla, twist its end. Now chill the tortillas for at least an hour.
- Then unwrap each tortilla and cut them into 4 equal pieces.
- Serve immediately.
