Choosing high protein salad for your lunch is a healthful decision to make as a bodybuilder. I prepare this potent salad boats for myself when I want to be little creative with my food. Cucumbers are a wonderful salad ingredient for summer, rich in fiber, vitamin and contain very few calories. It is a very filling ingredient and curbs the craving for more carbohydrate rich food. So the recipe is also good for weight loss.
These good looking salad boats are rich in protein, fiber, vitamins and minerals. A very appetizing and easy to make salad recipe that accompanied well for your day and night supper. I like to add nuts (optional) in the stuffing to bring the crunch factor in my salad avoid it as it will increase the fat content of the recipe.

Ingredients
- 1 cucumber Cucumber, with peel, raw
- 1 cup Brussels sprouts, cooked, boiled, drained, with salt
- 1 cherry Tomatoes, red, ripe, raw, year round average
- 1 tbsp chopped Onions, raw
- 1 dash Salt, table
- 1 tsp Spices, pepper, black
- 1 fl oz Lemon juice, raw
- 0.5 oz Peanuts, all types, dry-roasted, with salt
Instructions
- Cut the cucumber in half, lengthwise and scoop out the centre part to make a boat like shape out of it.
- Prepare the stuffing by mixing sprouts, chopper tomato, onions, peanut, salt and pepper. Mix all the ingredients to well combine.
- Now fill the stuffing in the cucumber boats and sprinkle lemon juice on the top.
- Cucumber salad boats are ready to serve.
