Ingredients
- 1 cup, chopped Broccoli, cooked, boiled, drained, without salt
- 1 small, large, medium sweet potato
- 1 tbsp chopped Onions, raw
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 fl oz Lemon juice, raw
- 1 tbsp Parsley, fresh
- 1 tsp, whole Spices, cumin seed
- 1 tsp Oil, olive, salad or cooking
Instructions
- Steam broccoli florets until tender but remain crunchy.
- Boil, peel and cut the sweet potato in small cubes.
- Heat a non stick pan and cook oil until smoked, add chopped onions and sauté until brown.
- Add broccoli florets and fry while stirring continuously until slightly brown from the edges Remove from the pan to a plate; reheat the pan and cook some more oil until smoked.
- Add cumin seeds and fry sweet potatoes cubes while stirring continuously until crisp.
- Add broccoli, salt and pepper to the sweet potatoes and mix well.
- Remove from the heat sprinkle lemon juice and parsley and serve.
