Ground beef and brown rice is a comfort meal recipe in which the rice is cooked in beef stock along with Mexican spices. It goes well with my nutrients needs as it is rich in complex carbs and lean protein. This preparation needs very little oil to cook and all the flavors incorporated well in the rice. A very aromatic and tasty wholesome rice skillet is ready in just 30 minutes.

Ingredients
- 1 serving Beef, ground, 95% lean meat / 5% fat, raw
- 1 cup Beef Broth or Bouillon (Canned)
- 0.5 cup Rice, brown, long-grain, raw
- 1 serving PACE, Organic Picante Sauce
- 1 tsp Spices, chili powder
- 1 dash Salt, table
- 1 gram Oil, olive, salad or cooking
- 1 cup Coriander (cilantro) leaves, raw
- 0.5 cup drained, rinsed Corn, sweet, yellow, canned, drained solids, rinsed with tap water
- 1 slice, medium Tomatoes, red, ripe, raw, year round average
Instructions
- Heat a skillet and pour little olive oil to it, when the oil is hot add ground beef and fry until brown.
- When the meat is no longer pink add veggies, corn, stock, rice, red chili powder, salt and picante sauce. Stir to well combine all the ingredients.
- When it starts boiling reduce to low heat to cover and cook for 15-20 minutes or until rice is done.
- Check in between to stir occasionally.
- When the rice is cooked and all the liquid is absorbed remove from the heat and sprinkle fresh cilantro.
- Serve hot.
