Ingredients
- 30 gram Plain Butter
- 0.24 cup arils Pomegranates, raw
- 0.24 tsp Salt, table
- 3 tbsp Parsley, fresh
- 0.52 cup, sections Oranges, raw, all commercial varieties
- 397 gram CAMPBELL'S Low Sodium Soups, Chicken Broth
- 1 cup Couscous, dry
- 1 spray , about 1/3 second Oil, PAM cooking spray, original
- 4 fillet Fish, grouper, mixed species, raw
- 1 gram Spices, pepper, red or cayenne
- 0.24 tsp Salt, table
- 0.52 tsp, whole Spices, pepper, black
- 0.52 tsp Spices, coriander seed
Instructions
- First up, you need to prepare couscous. For this, you need to place a large skillet over medium-flame and melt some butter in it. Then add some almonds in it and sauté for a few minutes so that butter is slightly browned and almonds are toasted. Then add couscous and continue to stir the mixture before removing it from heat.
- Now place a saucepan over high heat and boil broth in it. Now, into the pan add the couscous mixture. Cover it completely and set it aside for a few minutes. Then add oranges, salt, parsley, and pomegranate seeds.
- To prepare grouper you need to combine red pepper, peppercorns, coriander and little salt in a coffee grinder until you get a smooth mixture. Now rub this spice mixture evenly over the fish.
- Now place a grill pan over medium-heat. Then coat it with little cooking spray. Now place fillets over it and cook for a few minutes. Flip the fillets and continue cooking the other side for a few minutes. Once both sides are cooked evenly serve them with couscous.
