Artichokes that are used in this recipe are highly beneficial to us given that they are rich in antioxidants and help in reduction of cholesterol and prevention of deadly diseases like cancer. Ingredients
- 1 Potato small Potatoes, russet, flesh and skin, raw
- 2 large Egg, whole, raw, fresh
- 0.26 tsp Salt, table
- 4 large Egg, white, raw, fresh
- 1 oz Cheese, goat, soft type
- 0.26 tsp, ground Spices, pepper, black
- 1 tsp, leaves Spices, oregano, dried
- 0.26 cup, chopped Onions, raw
- 1 tsp Oil, olive, salad or cooking
- 1.5 package yields Artichokes, (globe or french), frozen, cooked, boiled, drained, with salt
- 30 gram Bell pepper (green/yellow/red)
Instructions
- Take a microwave towel and place potatoes over it. Microwave the potatoes for a few minutes at a high temperature. Once the potatoes are adequately cooked, remove from microwave and set aside for a few minutes. After removing their skin, roughly chop them.
- Now place a nonstick skillet over medium flame and little olive oil in it. Then add potato, bell pepper and onion and continue to stir until they become tender. After adding artichoke, continue cooking for about couple of minutes.
- Then add black pepper, salt and oregano to the above mixture. Now remove the mixture from heat and keep it aside.
- Take a small bowl and add egg whites, pepper, salt and whole eggs in it. Whisk the ingredients well.
- Now place a nonstick skillet over medium flame. Add little olive oil and half the egg mixture in it and cook for a few minutes or until the edges are perfectly set.
- Then flip the egg mixture and allow the other portion to cook for a few minutes. Now add a little portion of goat cheese and potato mixture over half portion of omelet. Then fold it in half using a spatula. Cook for a few more minutes.
- Repeat the procedure for the remaining portions of potato mixture, egg mixture and olive oil.
- Serve hot.
