Ingredients
- 1 leek Leeks, (bulb and lower leaf-portion), raw
- 1 cup Spinach, raw
- 1 cup, chopped Kale, scotch, raw
- 4 small Egg, whole, raw, fresh
- 1 dash Salt, table
- 1 gram Oil, olive, salad or cooking
- 1 tbsp, ground Spices, pepper, black
- 1 tbsp chopped Garlic
- 1 gram Spices, italian style
Instructions
- Preheat the oven to 350 degree F.
- In an oven proof skillet heat little olive oil and sauté chopped garlic for 1-2 minutes, add leek slices and cook while stirring for 3-4 minutes or until soft.
- Add chopped green vegetables, Italian spices and cook over medium heat until wilted.
- Evenly spread all the vegetables in the skillet and crack the eggs side by side on the vegetables. Cook the vegetables on the stove for 2 minutes.
- Now transfer the skillet to the oven and bake until eggs are set and firm for almost 4-5 minutes.
- Remove from the oven and sprinkle salt and pepper according to your taste.
- Serve with multigrain bread.
