Ingredients
- 2 loin, whole Pork loin, Tenderloin, trimmed, separate fat and lean only.
- 1 cup, sliced Peppers, jalapeno, raw
- 1 small whole Tomatoes, red, ripe, raw, year round average
- 1 medium Onions, raw
- 1 tbsp chopped Garlic
- 1 dash Salt, table
- 1 tsp Oil, olive, salad or cooking
- 1 cup Coriander (cilantro) leaves, raw
- 1 1 cup Water
- 1 tsp, whole Spices, cumin seed
- 1 tsp Spices, nutmeg, ground
Instructions
- Blend jalapeno pepper, tomato, onions and garlic in a blender until puree.
- In deep pan heat oil, add cumin seeds, nutmeg powder and pork cook while stirring for about 5 minutes or until brown.
- Add onion puree stir and cook until all the liquid is evaporated.
- Add water and salt cover and cook for 30 minutes on low heat.
- When the pork is tender and gravy is thick add cilantro and remove from the heat.
- Serve hot with brown rice.
