Ingredients
- 2 fillet Chicken breast, low fat
- 1 tablespoon Peanut butter, smooth, reduced fat
- 1 tbsp chopped Garlic
- 1 tsp Soy sauce made from soy and wheat (shoyu), low sodium
- 1 fl oz Lemon juice, raw
- 1 sprigs Coriander (cilantro) leaves, raw
- 1 tsp Oil, olive, salad or cooking
- 1 dash Salt, table
- 1 tsp Spices, pepper, black
- 1 serving PACE, Diced Green Chilies
Instructions
- To make the peanut butter sauce – blend together peanut butter, garlic, cilantro, green chili, salt, and lemon juice until smooth. Transfer to a small bowl and refrigerate until serve.
- Pound the chicken breast to make it thin and stretch. Cut into 1 inch long stripes.
- Season the chicken strips with salt, pepper, oil and soy sauce. Leave the chicken pieces in the marinade for one hour if you have time.
- Thread the chicken pieces onto a skewer.
- Heat the grill on high heat and spray oil to greats, place chicken skewers and grill about 5 minutes per side. Rotate the skewers occasionally for even cooking.
- When the chicken is cooked through, remove from the grill and serve with peanut sauce.
