Sweet potatoes are like energy powerhouse for weight lifers and bodybuilders, roast this root vegetable and toss with other ingredients to create a fantastic salad that complement almost any source of protein.
This salad is a perfect starter recipe for any meal; it is rich in fiber, low in fat and high in complex carbohydrate. I use to add beans and yogurt to this salad to make it rich in protein. Ingredients
- 1 small, large, medium Sweet potato, raw
- 1 beans Beans, snap, green, raw
- 1 cup, sliced Onions, raw
- 1 tbsp Nuts, walnuts, black, dried
- 1 tsp Oil, olive, salad or cooking
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 tsp Spices, garlic powder
- 10 gram Yogurt, Greek, plain, nonfat
- 1 fl oz Lemon juice, raw
- 1 cup shredded Lettuce, iceberg (includes crisphead types), raw
Instructions
- Peel and cut the sweet potatoes in one inch chunks.
- Preheat the oven to 400 degree F and prepare the baking tray by spraying oil to it.
- Season the sweet potatoes and onions with salt, pepper and oil.
- Place in the baking tray and roast for 20 minutes or until sweet potato is tender and soft.
- Remove the tray from the oven and add green beans and walnuts to it and roast again for 5 minutes or until green beans are tender.
- Meanwhile prepare the dressing by whisking together Greek yogurt, garlic powder, lemon juice, salt and pepper.
- Serve roasted sweet potato and vegetables on lettuce bed and top with Greek yogurt dressing. Serve warm.
