Ingredients
- 0.24 cup Creamy dressing, made with sour cream and/or buttermilk and oil, reduced calorie, fat-free
- 10 gram Water
- 5 gram Lemon juice, raw
- 4 large Egg, whole, raw, fresh
- 2 cup Spinach, raw
- 0.24 tsp, ground Spices, pepper, black
- 3 tsp Dijon Mustard
- 0.24 tsp Salt, table
- 1 tbsp chopped Chives, raw
- 5 gram Rice wine vinegar
- 4 slice Toasted whole grain bread
Instructions
- Take a small bowl. Add little water, sour cream, ground pepper, salt, lemon juice, mustard and chopped chives and stir well.
- Take 4 serving plates and place one slice of toast on each of these plates with spinach on top of them. Take a large saucepan and boil little water in it. Add little vinegar in it. Crack one egg at a time into a cup and then gently release it in water. After it is allowed to simmer for a few minutes, use a spoon to carefully remove it and place it over the spinach.
- Just before serving, add sauce over crostini.
