Lemon oats protein cake [Bulkbites.com]

This cake is a nice snack, adding that much needed protein and vitamins to my bodybuilding diet. I like to have them as an afternoon snack once in while. All added sugars are from fruits and honey, I prefer to go all natural/bio (so I also use non-GMO soy protein). This cake is as honest as it can get and packed with vitamin C.

Ingredients
- 1 cup Oats
- 3 medium Egg, whole, raw, fresh
- 1 tbsp Honey
- 1 large Apples, raw, with skin
- 1 fruit without seeds Lemons, raw, with peel
- 2 scoop Soy protein, neutral flavor
- 0.52 tsp Leavening agents, baking soda
- 0.24 tsp Salt, table
- 0.24 1 cup Water
Instructions
- Preheat the oven on 400F (200C)
- Grind the oats until powder with a kitchen machine or blender
- Zest the peel of the lemon and add to the oats
- Add soy protein, baking soda, salt and mix
- In another bowl crack the eggs, add the honey, water and lemon juice from 1 lemon
- Mash the apple in your kitchen machine or blender and at to the bowl
- Mix thoroughly
- Add the liquids to the oats mixture and mix again
- Spray in a cake batter with anti sticking spray and fill with the mixture
- Leave in the oven for about 40 minutes (keep an eye on it, some ovens are more powerful than others ;)
- Wait till it cold and serve!
