Ingredients
- 8 cloves Garlic, raw
- 1 Potato medium Potatoes, russet, flesh and skin, raw
- 0.52 unit Onion, red, raw
- 0.24 tsp, leaves Spices, thyme, dried
- 0.52 tsp Salt, table
- 1 slice, medium Bread, french or vienna (includes sourdough)
- 1 fl oz Lemon juice, raw
- 1 gram Lemon rind, grated
- 3 tablespoon Oil, olive, salad or cooking
- 61 gram Yogurt, Greek, plain, nonfat
- 2 unit Bell pepper (green/yellow/red)
- 453 gram Squash, summer, zucchini, includes skin, raw
- 454 gram Fish, halibut, raw, with skin (Alaska Native)
Instructions
- Chop the potatoes into pieces of 1-inch each. Take a saucepan containing cold water. Now add garlic and cook for a few more minutes or until the potatoes have completely cooked.
- Whilst the potatoes are cooking cut the bread slices into 3-4 pieces and place them in a large bowl. Now pour little liquid from potato over them. Now stir the ingredients so that a smooth mixture is formed. Now add lemon juice and zest, olive oil and yogurt and continue stirring so that you get a smooth mixture at the end of it all.
- Now place a large bowl in the sink when the potatoes are almost done. Then place a colander over it. Now separate garlic and potatoes from liquid. Store the liquid at a separate place. Now add potatoes into the mixture containing bread and smash so that you will get an even mixture. Now start adding the reserved liquid. Add olive oil and salt into the bowl and cover it up. Keep it warm until you are ready to serve it.
- Heat the grill over medium flame. Now spread little olive oil over the fish and season it with thyme and salt. Cook the fish on both sides for a few minutes or until they are sufficiently cooked. Transfer the fish on to a place so that they can be served.
- Take red onion, zucchini and bell pepper in a large bowl. Now add little olive oil and toss the ingredients so that they are evenly coated with oil. Now start grilling bell pepper under medium flame for a few minutes. Now add onion and zucchini and continue cooking for a few more minutes. Once the vegetables are cooked, serve all the items.
