Baked shrimp santorini is an elegant recipe for this great tasting seafood - shrimps. I love this great recipe that is inspired by Greek cuisine. Originally the shrimp are baked in flavorful tomato gravy with feta cheese and serve along orzo pasta. But here I am substituting the orzo with quinoa for making it bulging and fiber rich. Quinoa will add more value to the recipe as it is a rich source of complex carbohydrates and protein.

Ingredients
- 1 cup Shrimp, peeled and deveined
- 0.5 cup Quinoa, cooked
- 1 oz Cheese, feta
- 1 large Onions, spring or scallions (includes tops and bulb), raw
- 1 tbsp chopped Garlic
- 1 cup Tomatoes, crushed, canned
- 1 gram Oil, olive, salad or cooking
- 1 tbsp Spices, dill weed, dried
- 1 cup sprigs Dill weed, fresh
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 tsp Alcoholic beverage, wine, cooking
Instructions
- Preheat the oven to 350 degree Fahrenheit. And prepare a baking dish.
- Clean and wash the shrimps and pat dry with kitchen towel.
- In a non stick pan sauté onion and garlic with little oil until translucent.
- Add tomatoes, wine, salt, dill weed fresh and pepper, cover and cook the sauce until thick.
- When the sauce is thick remove from the heat.
- In the baking dish place a layer of cooked quinoa, then arrange shrimps on it and pour the tomato sauce over the shrimps.
- Sprinkle crumble feta cheese on top and dust with some dill weed (dried).
- Bake in the oven for 25 minutes or until the shrimps are cooked. Serve hot.
