This recipe is a perfect lunch meal option for me as a bodybuilder; it is loaded with all the healthy ingredients like green peas, mushrooms, brown rice and herbs. This is a one pot rice preparation that is full of protein and other vegan nutrition.
Greek yogurt dip is served along with vegetable brown rice make it complete formula for a bodybuilder. It increases the protein quotient of the recipe and cabbage take care the need of crucial fiber.
Brown rice is a rich source of good carbs, provide me required energy for weight training and exercise. They are also full of fiber, iron and calcium needed for strong bone density and improve cell growth for muscle building.

Ingredients
- 1 package Peas, green, frozen, unprepared
- 0.5 cup Rice, brown, long-grain, raw
- 1 cup, whole Mushrooms, white, raw
- 1 gram Spinach, raw
- 1 tbsp chopped Onions, raw
- 1 tsp, whole Spices, cumin seed
- 1 tbsp, crumbled Spices, bay leaf
- 1 tsp Spices, ginger, ground
- 1 tbsp chopped Garlic
- 1 tsp Oil, olive, salad or cooking
- 1 container Yogurt, Greek, plain, nonfat
- 1 cup, shredded Cabbage, common (danish, domestic, and pointed types), stored, raw
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 gram Ground cumin
- 1 1 cup Water
Instructions
- Heat oil in a pressure pan, and saute onions until translucent.
- Add cumin seeds and bay leaves cook until fragrant, add ginger garlic paste and cook for 1-2 minutes.
- Add green peas, chopped mushrooms and spinach, stir and cook for 2-3 minutes.
- Add rice (soaked in water for one hour), water, salt and pepper; stir to mix all the ingredients.
- Close the lid of the pressure pan, turn the heat to high and cook until three whistle.
- After three whistle turn off the heat and let it rest for 10-15 minutes.
- When the pressure subsides, open the lid and serve the vegetable rice with Greek yogurt dip.
- For Greek yogurt dip – in a small bowl add Greek yogurt, cumin powder, salt and chopped cabbage.
- Whisk all the ingredients to combine well and serve along with vegetable rice.
