Ingredients
- 2 large Egg, whole, raw, fresh
- 1 cup, pieces or slices Mushrooms, white, raw
- 1 medium Bell pepper (green/yellow/red)
- 1 slice, medium Tomatoes, red, ripe, raw, year round average
- 1 tbsp chopped Onions, raw
- 1 dash Salt, table
- 1 tbsp, ground Spices, pepper, black
- 1 cup, shredded Cabbage, common (danish, domestic, and pointed types), stored, raw
- 1 tsp, ground Spices, oregano, dried
- 1 tsp, ground Spices, thyme, dried
- 1 gram Oil, olive, salad or cooking
Instructions
- Blanch the mushroom in boiling water, drain and chop and set a side.
- Finely chop the tomatoes and vegetables for later use.
- Whisk together egg, salt, oregano, thyme and pepper in a medium size bowl.
- Heat oil in a non stick pan and saute onions until translucent.
- Add vegetables and mushroom, stir fry and cook for 3-4 minutes or until soft.
- Add egg and gently stir fry to scramble the eggs.
- When the eggs are scrambled, remove from the heat and serve along with tossed whole wheat bread.
