Ingredients
- 1 fillet Fish, salmon, Atlantic, wild, raw
- 1 60 ml Mirin Sauce
- 1 tbsp Soy sauce made from soy (tamari)
- 1 tbsp Rice wine vinegar
- 1 tbsp Brown Sugar
- 1 cup, pared, chopped Cucumber, peeled, raw
- 1 medium Onions, spring or scallions (includes tops and bulb), raw
- 1 cup shredded Lettuce, iceberg (includes crisphead types), raw
- 1 NLEA serving Avocados, raw, California
Instructions
- Cut the fish in big chunks or cubes.
- In a medium size bowl add mirin sauce, soy sauce, sugar and salmon chunks. Mix well to coat the fish with marinade and set aside for at least 30 minutes.
- Meanwhile prepare the salad by chopping the salad ingredients.
- Heat a non stick pan over medium heat and cook the salmon chunks for 2 minute each side or until crispy.
- Pour vinegar and any remaining marinade to the pan and cook until thick for about a minute.
- Transfer the fish to the bowl of salad and mix well.
- Serve at room temperature.
